PUMPKIN CHOCOLATE CHIP COOKIES (GLUTEN FREE/DIARY FREE)

Soft and Fluffy these wheat and diary free Pumpkin Chocolate Cookies are the BEST 

Pumpkin Chocolate Chip Cookies (Gluten free/Diary Free)

Ingredients:                                                         

1 cup Oat flour (gluten free)                                                   

1 tsp baking powder

1/2 tsp baking soda

1/2 cup brown sugar

1 tsp cinnamon

1/2 tsp All spice 

Pinch of salt 

3/4 cup diary free dark chocolate 

1 1/4 cup can pumpkin

2 Eggs 

1 tsp Vanilla extract

Directions:

Preheat oven to 350 degrees. Combine all dry ingredients. In another bowl combine pumpkin, eggs, vanilla. Combine dry and wet ingredients. Spoon cookies onto a greased cookie sheet. Bake for ~ 12 minutes. Makes ~ 2.5 dozen cookies. 

* If you are not bothered by gluten, then you can use your preference of oats. Gluten free is not required for the recipe to come out fabulous*
