Texas Caviar

TEXAS CAVIAR  (vegetarian, good source of fiber, diary free)

Total time: 2 hour 20 minutes (Prep time 20 minutes + 2 hours refrigeration prior to serving)

Yield: 8 servings (1/2 cup per serving)


2 (15.8 ounce) cans black eyed peas, rinsed and drained

1 tomato, chopped

2 fresh jalapenos, chopped (remove seeds and stems)

1 white onion, chopped

1 Green bell pepper, chopped

1 Avocado, chopped

1 tbsp. olive oil

Juice of two limes

1 tsp. garlic powder

1/4 tsp. cumin

Salt and pepper to taste

1 Bag Blue corn chips


Combine and mix all ingredients in a bowl. Cover and refrigerate for at least 2 hour before serving. Serve with blue corn chips.
